serves 4
INgredients
1 head broccoli
1/2 beet
pinch of sea salt
1 lemon
Process Wash the broccoli well.
Cut the stem off of the broccoli. Tear the florets apart, leaving them in large pieces.
Place broccoli pieces into steamer basket. Put about 2 inches of water into a steamer pot (here, I used a pasta pot with steamer insert). Cover and bring to a boil. Place steamer basket in pot, cover and let steam until broccoli turns a bright green (about 1 minute). Remove from pot;
arrange in a serving bowl.
Peel the beet and grate it, using a box grater, medium grade.
Sprinkle on top of broccoli in serving dish.
Add a pinch of sea salt and squeeze fresh lemon on top.
